Beet Salad with Apple and Tofu

6 beets
salt and ground black pepper to taste
1 tablespoon vegetable oil
1/2 (7.5 ounce) package smoked tofu, diced
1/2 apple, diced
1 (8 ounce) container plain yogurt
1 teaspoon prepared horseradish
1 teaspoon maple syrup

Instructions :

Place beets into a large pot, cover with cold, lightly salted water, and bring to a boil. Reduce heat, cover, and simmer until beets are soft and can easily be pierced with a fork, about 40 minutes. Drain and rinse under cold water. Peel and cut into cubes.
